New Delhi dining destination Bukhara is expanding for the first time in its 34-year run with a two-week pop-up restaurant at London’s Sheraton Park Tower hotel from May 17 to June 1. Under the styling direction of Indian-American designer Waris Ahluwalia, the outpost will offer the full Bukhara experience.
The hotel has gone all-out to create an authentic experience, including installing traditional tandoor (clay) ovens from Inia, and Bukhara’s chef Manjit Gill will be in London to prepare his authentic, time-honored breads, spice mixes, and marinades. The menu features a vegetarian tasting ($95) and a meat and seafood tasting ($130), composed of the Bukhara’s signature North West Frontier fare, a regional cuisine of India. Dishes include Sikandari Raan, a leg of lamb marinated in a red chili powder sauce, and Dal Bukhara, black lentils slow-cooked with tomatoes, ginger, and garlic over coals for 18 hours.
